Your Grandmother's Fresh Strawberry Crepes


Ah, Sunday breakfast! Je t'adore! This week's recipe began with The Joy of Cooking but I've added more than a dash of Madge to the mix. You can fill your crepes with whatever you choose, sweet or savory they are always delicious. Make a batch to freeze and thaw when you need a last minute meal.

I like fresh fruit and freshly whipped cream with mine, not too sweet and just right. In a perfect world, I would have drizzled these with melted dark chocolate, but alas we had none.

Your Grandmother's Fresh Strawberry Crepes
Makes 14-16 5 inch cakes

Use a small 5" omelet pan for these heated to just above medium. (The interior circumference of the pan should be about 5".)


Filling and topping
1 pint sliced strawberries (bananas, raspberries or blueberries would work here too)
1/2 pint heavy whipping cream
1 tsp vanilla
2-3 tsp powdered sugar

Crepes
Sift:
3/4 cup all purpose flour
Resift with:
1/2 tsp salt
1 tsp double acting baking powder
2 tbsp powdered sugar
1/2 tsp cinnamon

Beat:
2 eggs (do this by hand with a whisk or fork)
Add and beat:
2/3 cup milk (I used 2%)
1/3 cup water
1/2 tsp vanilla

Heat oven to 300 degrees

Make filling and topping first and keep chilled.  Wash and slice strawberries (I used a pint)(save several whole strawberries sliced and fanned for garnish)  Use mixer to whip cream with 2 tbsp powdered sugar and 1 tsp vanilla.

Make a well in center of dry ingredients and pour in the liquid ingredients. Combine them with a few swift strokes. Ignore the lumps, they will take care of themselves.

Heat your skillet and spray with non-stick spray. Pour a small amount of batter in the center, roll around to the edges of the pan and cook until lightly browned. Flip and repeat. Place crepes on a cookie sheet with a wet paper towel around them to keep warm. Spray pan for each crepe.

Fill crepes with berries and top with sifted powdered sugar, piped whipped cream and a fanned strawberry. (If you have some, drizzle with dark chocolate!)
